MY STORY

Hi, I'm Fishychippie, and this is MY STORY:

I am a 30-something wife and mom of 3. I was recently diagnosed with Endometriosis, which may have contributed to the development of my food intolerances and other health problems. Since I can no longer eat Gluten, Milk, Eggs, Soy, Beef, Corn, or Coconut, I am on a quest to find healthy, tasty recipes. I don't technically have digestive problems with sugar, but I have discovered the health benefits of a sugar-free diet. So these 8 foods now make up my "DO NOT EAT" LIST, (as in my "It's really not as challenging as it sounds to stay away from food that will make you feel like you have food poisoning, so definitely, DO NOT EVER EAT! or you'll regret it"  LIST).

This journey has been surprisingly inspiring. Don't get me wrong, I have melt-downs and cry about food once in a while. But, discovering the wonderful options I still have has set me free in so many ways.  It is so fun to find new and creative combinations, not to mention the freedom of being a guilt-free eater.  I choose to enjoy the positive sides to eating healthy, and my taste buds are thanking me for it.

EXCEPTIONS:  While I can't eat milk, cheese, or other dairy products, plain greek yogurt is do-able for me and has the added benefit of probiotics, so many of my recipes include greek yogurt (always plain and with as few ingredients as possible). I can also eat organic corn. Corn is harder for most people to digest, even in organic form, but hey, I am in need of a cracker/chip type substance and organic corn chips fit the bill and are also cheaper than rice crackers, so they are included in a few of my recipes. I can eat most rice products, but seem to have trouble with rice bran, so I am currently searching for brown rice pastas that do not include bran to expand my recipe possibilities.  I don't eat sugar, but I do eat these sweeteners in low amounts:  Agave, Stevia, Honey, and Molasses.

PURPOSE: I am using this blog as a personal recipe collection. I wanted access to everything from my phone while I'm shopping as well as at home. While I am a Pinterest junkie, I get frustrated when I go to a pin and the site has been deleted. I needed to save my must-have recipes before they got wiped off the face of the internet! Plus, there are all the recipes in my card box at home, and the ones I hang on the fridge, and the ones that are just in my head - wow! Organization intervention! Hence, the blog. I won't be posting long stories about each recipe. When I use internet recipes, I just skip over those anyway. I will be happy to give extra explanations if requested, however.

CREDIT: Most of my recipes are from other bloggers. I will always give credit to those who have done the work and taken their own photos. So, I do not include details like step-by-step photos and nutrition information. Please feel free to visit the original sites for those details.
